Los Monteros Cava is produced from carefully selected grapes grown in the vineyards of Requena and picked early September. Following a cold maceration in pneumatic presses, the must is fermented in stainless steel tanks at 57F (14C). Tirage, the bottling of the still wine and the secondary fermentation in the bottle, begins in January. The cava is aged in bottle for a minimum of nine months before being disgorged, receiving a dosage, and being labeled. Expect a clean, delicately floral notes with citrus tones, a long finish, and a creamy texture. This is a great choice for an aperitif.

Cobertizo, is a project led by D. Antonio M. Quiroga (better known as Toni), the third generation of winegrowers in Valtuille de Abajo in the heart of the Bierzo region. His grandfather and father dedicated themselves to the elaboration of wines with mencía grapes in an old winery. Under Toni’s leadership, new vineyards adjacent to the family vineyard were acquired and new winery facility. The winery seeks to produce wines with the best quality so they have been incorporating the most modern avant-garde technologies. The “El Blanco” (mostly godello) has fading aromas of ripe fruit and yellow flowers, with aromatic and mineral notes.
The luscious red fruit and soft texture make this a perfect wine for everyday drinking. Produced from dry-farmed vineyard at very low yields, the wine is highly perfumed with floral notes and red berries and has a nice, long finish — and drinks like it costs twice the price. . .
